Pears, pomegranates, pink grapefruits are some of the most quintessential tastes of fall. Let’s celebrate the fall season with two great champagne drinks!
In a small saucepan combine the pears, sugar, wine, star anise, lemon zest and salt. Bring to a boil then let simmer for about 5′. Transfer to a small bowl and let cool to room temperature, about 10′.
Remove the star anise and transfer the pears to a blender and purée. Pour the puréed pears into an ice cube tray. Leave the tray in the freezer for approximately 4 hours.
Put a pear slice, a sprig of fresh rosemary and 2 ice cubes of pear sorbet into each champagne glass, top with chilled pink champagne.
Put a slice of pink grapefruit, 1 teaspoon of pomegranate seeds and a sprig of fresh sage into each champagne glass and top with chilled pink champagne.
