Constantinople Walnut and Raisin pie
Constantinople Walnut and Raisin pie is pure aromatherapy; the scent of almonds and walnuts fills the whole house! This is a very light dessert and it is perfect for a healthy snack at work. A cup of chamomile tea pairs beautifully with a slice of Constantinople Walnut and Raisin pie. You won’t be able to resist this pie!

Ingredients

  1. Set 2 tbs chopped walnuts aside. Place the remaining walnuts and the sultanas in a bowl and pour the pomegranate liqueur over them in the bowl. Soak for 30′.
  2. Preheat the oven to 180°C.
  3. Using a pastry brush grease a 20cm round pie pan with some sunflower seed oil.
  4. Add in a large bowl the flour, the baking powder, the brown sugar, the ground gloves, the cinnamon, the ginger and the salt.
  5. In another bowl pour the applesauce, the sunflower seed oil and the almond milk. Add the pomegranate liqueur-soaked walnuts and sultanas with the liqueur left.
  6. Then start folding and mixing the solids into the liquids. Note: With a rubber spatula whisk gently scrapping around the edge and finishing by folding the mixture on top of itself.
  7. Pour into a pie pan. Slash cross and side slashes before baking. Add chopped walnuts to the top.
  8. Bake for 50′.

If there is not any Pomegranate Liqueur left, we can soak the walnuts and the sultanas in any other liqueur or even in cinnamon tea.

In this vegan Constantinople Walnut and Raisin pie recipe we substitute the eggs and replace them with Applesauce. This recipe is egg free, dairy free and butter free!
