- 1 cup baby beet leaves washed
- 1 scallion diced
- 1 cucumber baby, sliced
- ½ cup blueberries washed
- 1 pink grapefruit peeled and segmented
- ½ cup walnuts halves

- Place all the fresh vegetables in a bowl; add the blueberries and pink grapefruit.
- Serve the salad dressed with homemade blueberry vinaigrette and garnished with walnut halves.
