Cherry-Vanilla Crisp (Gluten-free)
Hot summer days call for light and refreshing treats. When the weather is hot, I crave a house that smells like sweet cherry and vanilla bliss. This easy and gluten-free cherry-vanilla crisp pairs beautifully with Greek yogurt, ice-cream, custard, or pudding.

Instructions
  1. Preheat the oven to 180ºC (350ºF).
  2. Split and scrape the vanilla seeds from the bean. Toss the cherries, sugar, cornflour and vanilla seeds in a large bowl and pour into a 30cm round baking tray lined with parchment paper.
  3. In a large bowl add the flour, oats, sugar, and butter and rub together to make crumbs; sprinkle them over the fruit, spreading evenly.
  4. Bake for about 25', until the topping is golden brown. Set aside to cool.
Recipe Notes

Useful Information

  1. When using frozen berries, bake the crisp for about 30-35'.
  2. Serve with Greek yogurt, ice-cream, custard, or pudding.
