- 1 onion large, chopped
- 2 cloves garlic sliced
- 4 cups water (1 litre) boiling
- ½ kg carrots
- 2 sweet potatoes medium-sized
- 1 tablespoon ginger fresh, peeled and grated
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon turmeric powder
- ¼ teaspoon curry powder
- ⅓ cup olive oil Greek extra virgin

- Sauté the onion and garlic until starting to soften; check with a fork. Put the diced carrots and sweet potatoes in the pot. Pour some more boiling water into the pot. Cover the pot with a lid and cook over medium-low heat for about 10'. If necessary, add some more water to keep the bottom of the pot covered.
- When the diced carrots and sweet potatoes are softened, add the ginger and pour all the boiling water left into the pot. Cover the pot with the lid and cook for about 10'.
Useful Information
When it comes to puréeing a soup, the main choices are to use a blender or a food processor or an immersion blender. If your food processor or your blender does not have heat-resistant glass bowl, let the soup cool to room temperature and then purée it.
You do not have to purée the soup in order to serve it, as my photos will testify.
Sweet potato and carrot soup can be served warm or at room temperature.
