Grilled Eggplant Salad
Grilled Eggplant Salad is a delicious appetizer or side dish. It has a light velvety texture and a surprising smoky flavor! The parsley and the garlic and the green chili pepper go well with the luscious flavor of eggplants.

  1. Preheat the oven to 220°C.
  2. Wash the eggplants. Pierce the eggplant skin in the middle of each eggplant with a knife.
  3. Put a tray in the oven on the self below, add water to this tray as the steam helps regulate the heat. Place the eggplants on a baking sheet that has been lined with parchment paper. Arrange them on the baking sheet. Place this baking sheet above the tray with water. Roast the eggplants in the oven for about 40'.
  4. After 30' open the oven and place the green chili pepper next to the eggplants and let it roast for 10'.
  5. Place the roasted eggplants in a bowl, cover them. Set aside until cool enough to handle.
  6. Peel off the skins and deseed the roasted eggplants. Finely chop the eggplants with a knife until they form a smooth puree.
  7. Finely chop the roasted green chili pepper, after you peel off the skin and deseed it. You should wear gloves when working with hot peppers. Put inside a bowl the puree, the garlic, the olive oil, the salt, the green chili pepper, the vinegar, the parsley, and stir well.
Recipe Notes

You can choose any type of eggplants you prefer. I like the graffiti eggplants because their flavor is mild.

When the eggplants are cooked, you can place them inside a cook bag for 10'-20', the skins come off more easily.

Children love this salad! You can avoid using the green chili pepper if you haven't introduced hot peppers to your child's diet.

This salad is great spread over some slices of the No Knead bread.

You can store this salad in the refrigerator 4 to 5 days.
