Ingredients
- 1 cup raisins sultanas
- 1/2 cup walnuts chopped
- 1/4 cup pomegranate liqueur or use a liqueur of your choice
- 3/2 cups flour white whole wheat
- 1 tablespoon baking powder
- 4 tablespoons brown sugar
- 1/4 teaspoon cloves ground
- 1 teaspoon cinnamon ground
- 1/4 teaspoon ginger ground
- 1/2 teaspoon salt
- 3/4 cup applesauce
- 1/2 cup sunflower seed oil
- 1/4 cup almond milk

Instructions
- Set 2 tbs chopped walnuts aside. Place the remaining walnuts and the sultanas in a bowl and pour the pomegranate liqueur over them in the bowl. Soak for 30'.
- Preheat the oven to 180°C.
- Using a pastry brush grease a 20cm round pie pan with some sunflower seed oil.
- Add in a large bowl the flour, the baking powder, the brown sugar, the ground gloves, the cinnamon, the ginger and the salt.
- In another bowl pour the applesauce, the sunflower seed oil and the almond milk. Add the pomegranate liqueur-soaked walnuts and sultanas with the liqueur left.
- Then start folding and mixing the solids into the liquids. Note: With a rubber spatula whisk gently scrapping around the edge and finishing by folding the mixture on top of itself.
- Bake for 50'.
Recipe Notes
If there is not any Pomegranate Liqueur left, we can soak the walnuts and the sultanas in any other liqueur or even in cinnamon tea.
