Instructions
  1. In a bowl stir together with a spatula the flour, baking powder, salt and smoked paprika.
  2. In a separate bowl pour the olive oil and wine. Then start folding and mixing the solids into the liquids.
  3. Knead until you get a fairly soft dough. Cover the bowl with plastic wrap. Let rest and rise at room temperature for 1 hour.
  4. Preheat oven to 180°C or 356°F. Line 3 large baking sheets with parchment paper.
  5. On a wooden cutting board or surface, cut the dough into hazelnut-sized balls using a sharp knife. Pat it into a rectangle with your hands to a thickness of about 1/8-inch (about 1/2 cm thick).
  6. If you want to coat some or all the crackers with sesame and poppy seeds, follow this technique in order for the seeds to stick: Put the seeds in a bowl and fill it with cold water. Drain them. Put the seeds on a paper towel. Press each side of each cracker into the seeds; using a tapping motion make sure each cracker is covered with seeds on both sides.
  7. Bake the crackers for 20' until golden. Turn oven off. Leave them inside the oven for 15' until they are totally dry.
