  1. In a large, deep skillet sauté the chopped scallions with some lukewarm water over medium heat until they are very soft.
  2. Add the spinach and stir quite frequently. If needed pour more lukewarm water.
  3. Add salt and ground black pepper and stir to mix.
  4. After sautéing the veggies, place the wheat groats in the skillet and pour water (use a 1:2 ratio of one cup of wheat groats to two cups of lukewarm water).
  5. Bring to a simmer then cover with a tight fitting lid. When the wheat groats are fully cooked, add the mint leaves and pour the olive oil. Stir to mix and remove from heat.
  6. Serve with lemon juice.
