  1. Wipe mushrooms with a damp paper towel and trim the long stems.
  2. In a large bowl, combine the lemon juice, the garlic, the mustard, the olive oil, the thyme, the salt and the pepper.
  3. Place parchment paper on a baking sheet. Place the mushrooms facing up. Drizzle the sauce evenly over mushrooms, marinate 10'.
  4. Preheat oven to 220°C. Bake for 30'.
  5. Flip over the mushrooms and bake for another 10'.
